Nice RPG or Simulator game to help pass the next three weeks.

I am waiting some test results and they won't be in until mid July. I have a decent game collection on my PS4 but it is starting to get a bit stale. I currently have Fallout 4, Skyrim, Dying Light, Witcher 3, Borderlands 2, MGSV. My favorite game is Fallout, any games that are similar in the sense that you can build you character, maybe collect collectibles. things like that?
