You can let it download and prepare to install, then leave it be. If you cancel and delete it it'll just keep coming back, i even went offline and it still added it to the download list, so it's not worth the hassle.
If you do indeed downgrade, then it'll remove your folders and whatever 5.0 initially added. Also apparently uninstalls some applications like share factory. It's currently in Beta 5, so if you downgrade, you can't revert back at all. You're going to have to wait until Beta 6
